Banana Bread
Flourless, dairy free, gluten free, and no refined sugars. Plus DIY Oat Flour!

Plus, learn how to make your own oat flour!

My husband and I took a road trip recently to meet our brand new baby grandson (oh my goodness… he’s SO cute!!!). Before leaving for the visit I enjoyed an afternoon of baking and cooking, and we packed up a cooler of food to bring to our growing family.

The baking included my favorite banana bread. A food processor, a bowl, and less than 10 minutes of simple prep work, produces two deliciously comforting sweet breads. This recipe makes use of DIY oat flour and is sweetened with local honey, so what we have here is a delicious gluten free bread with a hearty texture and no refined sugars.

Using almond milk keeps the bread dairy free. And, if you’re unable to have eggs in your diet this recipe is ideal for you too. The added apple cider vinegar mixes with the baking soda to lighten the bread, and fluff up the batter, without eggs.

Knowing that a loaf of this bread was going to be packed into the cooler to be enjoyed by the kids, I added a handful of milk chocolate chips to half of the batter.

To keep your bread refined sugar free omit the chips. And remember that bananas and honey, while not refined, are still sugar. Although this recipe is a healthier version, I still suggest looking at the bread as a treat, not a meal … it’s so yummy that I have to remind myself of this fact each time we make it!

* NOTE:

I used 9x5 bread pans. This recipe will make 2 loaves of banana bread.

You can use maple syrup in place of the honey in this recipe but may need to add a bit more than ½ cup depending how sweet you like your bread.

Coconut milk can be used instead of almond milk if that’s your preference, keep the same measurement as written below.

If you want to sweeten up the loaves further you can add ½ cup to 1 cup chocolate chips as I did here. Simply add the chips into the mixing bowl last, after the other ingredients are combined, then place batter into bread pans.


Banana Bread and DIY Oat Flour Recipe

Ingredients

  • DIY Oat Flour (recipe below)
  • 3 ripe bananas (mashed)
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 1/2 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 1/2 cup almond milk
  • 1/2 cup honey
  • 1 ½  tsp cinnamon
  • 1 tsp allspice
  • pinch of salt

* optional chocolate chips


Instructions


Preheat oven to 350 F.

Grease the bread pans liberally with a pat of butter, or coconut oil, and set aside.

Place all ingredients into a large bowl and stir well with a large spoon or spatula, until a smooth batter forms.  Pour the batter into the bread pans and bake for 35 to 40 minutes. Remove the loaves from the oven and allow them to cool completely before loosening from the pans and slicing.
 

Easy DIY Oat Flour:

Add 5 cups rolled oats into a food processor and blend until a fine powder forms (A blender works well if you do not have a food processor). 

This will create the ideal amount of oat flour for the above banana bread recipe; approximately 3 cups.
