My family enjoys these tangy onions on our tacos, burgers, and scrambled eggs (I’ve even caught my husband snacking on a few straight out of the jar as a snack the other night).
I made Thai Turkey Burgers for dinner the other evening and decided that we needed pickled onions to go with the burgers. Although I suggest that you not enjoy these pickled onions until they’ve sat in the fridge for at least two to three hours, sometimes you just don’t have that much time…
After about ten minutes of prep work I had ours sitting in the refrigerator and pickling in the jars, and although they only spent an hour or so in the fridge they were still perfectly tangy and tasty on our Thai Turkey Burgers.

Quick and Easy Pickled red Onions
1 cup red wine vinegar
1 cup apple cider vinegar
1 teaspoons pickling salt or sea salt salt
2 medium red onions, thinly sliced
3 cloves garlic, peeled and halved
Place the onions and garlic into mason jars and set aside while getting started on your brine.
For the brine, combine the red wine vinegar, apple cider vinegar, and salt in a small saucepan and bring to a light boil. Stir often to ensure that the salt dissolves completely.
Pour the liquid over top of the onions in the mason jar being sure that the onions are fully covered with the liquid.
Allow the jars to cool a bit before placing the cover and setting in the fridge.
You can enjoy your Pickled Red Onions after they’ve sat in the fridge for two to three hours, but allowing them to sit overnight before eating is even better!
