A delicious and creamy chia seed pudding topped with sliced bananas, blueberries, and walnuts. Sooooo good, and soooo pretty….just look at those bright purple blueberries!
And chia seeds are all kinds of healthy for you. Those tiny seeds are a powerful anti-inflammatory food and are full of fiber, vitamins and minerals.
2 cups unsweetened coconut milk
¼ cup chia seeds
¼ tsp cinnamon
2 bananas sliced into “coins”
1 cup blueberries
½ cup walnuts
Honey (if desired)
In a bowl combine the coconut milk,chia seeds, and cinnamon, and give them a good stir. Allow the mixture to sit for about 15 minutes until the seeds just start to gel together and give another vigorous stir. Then cover the bowl and place in the refrigerator for about 2 to 4 hours to allow the seeds to fully gel and become a creamy pudding consistency.
(You could also prepare the chia seed pudding the night before and refrigerate overnight).
When ready to serve place the chia seed pudding into serving bowls or glasses and top with the sliced banana, blueberries, and walnuts. If you'd like to add some extra sweetness drizzle with a bit of honey.
