Cucumber Noodles with Spicy Peanut Sauce and Shaved Asparagus

These Cucumber Noodles with Spicy Peanut Sauce and Shaved Asparagus fit just what I needed today. Fresh, colorful, full of vegetables, oh and this spicy sweet peanut sauce. Oh. My. Yum! I drizzle this sauce over nearly everything….chicken, noodles, rice, a dip for carrots, sauteed broccoli. Mmmmmm.

Making veggies into noodles gives this dish a fun texture. There are a few ways you can create cucumber noodles, a quick google search will give you some options. Today I used my spiralizer but using a vegetable peeler will give you nice ribbons that would be pretty in this dish. If you’re not interested in the noodles simply seeding and dicing your cucumbers will work just fine too.

A couple of tips for you with this recipe….

The sauce is quite thick but the cucumber will release its own water so once the sauce and veggies are tossed together the sauce will thin out some and become the perfect consistency. However, because the cucumbers are full of water this is a dish best eaten right away, it does not do well as left-overs. It’s truly SO delicious that I’d be surprised if you had anything left over anyway ;)


½ cup peanut butter (I used smooth but chunky would work as well)

1 Tablespoon sriracha (more if you like extra spicy ;) )

1 Tablespoons honey (more if you want extra sweetness, I tried to keep the sugar content low today)

1 ½  teaspoon sesame oil

3 Tablespoons liquid aminos (or soy sauce)

1 Tablespoon lime juice

Salt and pepper to taste

¼ cup peanuts (chopped)
½ cup red onion (chopped finely)

2 to 3 medium sized cucumber (made into noodles)

4 large stalks of asparagus (peeled into ribbons)

2 teaspoons white sesame seeds
chopped fresh cilantro


For the sauce: In a bowl combine the peanut butter, honey, sesame oil, sriracha, lime juice, and aminos (or soy sauce). Mix well with a whisk or fork. Add your salt and pepper to taste.

Place your cucumber noodles and shaved asparagus into a large bowl and add the peanut sauce, the chopped peanuts, and the red onions. Toss to coat the noodles with the sauce. Serve immediately and top each bowl with sesame seeds and chopped cilantro for garnish.
